Because I just have to...
There's no evidence that she actually shot the ship down herself or that she's even a real pilot. A propeller-driven plane couldn't get into space to shoot it down, and the Defiant probably has a stronger hull than an NX-01 shuttlepod (which giggles at WW2 era rounds). That and I can't imagine what could be aboard the Defiant that would burn like that while downing it, without making the warp core go up or visibly damaging the hull. Maybe the Defiant ran out of weapons and destroyed an enemy munitions depot by ramming it?
On second look...that's too small to be the Defiant anyway. Where the landing gear's tracks pass the ship they're about as far apart as the Defiant's hull is wide, and the tracks look to be about 6 ft apart as we near the plane itself. So if anything she shot down some tiny model of the Defiant. Which managed to put multiple holes in her plane without taking any hull damage. Defiant is hardcore, even miniaturized.
