You bastard taunting us with that Tasty looking pie! Now i am hungry for Apple pie! :P

And BTW, having made an apple pie i shall tell you that the phrase "Easy as Pie" is misleading.

Not the most show worthy pie, but looks good. The crust at least has the right look to it.

You want something easier? Try shortbread cookies with apple butter.

Chop up about three pounds of apples, golden delicious or similar. Add a cup of sugar, a half cup of water and bring to a simmer. Cook until the apples are tender, then puree the whole thing and return to the pot. Add cinnamon and a pinch of salt and simmer over low heat, stirring occasionally, for 1 to 1-1/2 hours, until the mixture is thick and doesn't run when cooled.

Make shortbread from two sticks of butter creamed with a little sugar and a pinch of salt. Add cinnamon, powdered ginger, allspice, ground cloves, nutmeg, cardamon and a bit of vanilla, then mix in a cup of flour until it forms a soft dough. Refridgerate for about a half hour, then roll out to a half inch thick and cut into rounds. Bake until golden, about 13-15 minutes, and then let cool.

Press a dollop of apple butter onto the bottom of one cookie, and place another cookie on top of it. Serve with milk.

I should have doubled the amount of crust. I had to roll it pretty thin to get even that much coverage.

Ah that would explain it. Though the apple content is very nice. Good to see a person who prefers a more APPLE then crust ratio.
