Sarek was just over 200 at the time of his death in 2369. This is based off his his being 102 in Journey to Babel, which is set in 2268. Spock was born in 2232. At the time of Nemesis 2379 he would have been almost 150.

So for Spock to be Sarek's age, this film would have to be set in the 2430's.

Also keep in mind that when we last saw Spock in TNG, he had gone underground to aid to the Reunification movement. Continually evading the Tal Shiar, scavenging for supplies, and living on the run is bound to have had a negative effect on anyone's health and physical appearance.

They might, but there may be too much exposition/backstory for non-fans to understand. Ultimately, it appears that the tie-in comic will be the one to focus on that.

Well wasn't Spock on that cold planet talking to Kirk and Scotty? Wouldn't that explain the use of furs? I mean, why else would he be wearing furs considering he had in possession a time ship. If he has a ship and it had replicators, wouldn't he be able to get better clothing?

I always took Spock's older appearance to be due to the fact he was half-human. Keep in mind, even in the TOS movies, Spock, who was in his 50's and 60's looked older than Sarek did in "Journey to Babel", when he was 102 as you note.
