Questions for the Trek Chronoligists

Your humble author is currently writing a new fic dealing with various points in time during the Trek universe. I just need to knwo certain little details that I'm having a bit of a hard time finding out and I'm certain certain Trekkies here can give me some quick answers to these questions in reagrd to Trek timelines and what teh ehll is going on in them:
DS9: The VERY begining of the Dominion War - the Episode where they try to take the station and Sisko abandons it (I have trouble with DS9 Ep names.) This is the main setting for the TNG era portion of the tale. Keeping that in mind what is answer to teh following questions:
Is Picard in command of the Ent-D or Ent-E at this point?
Is Voyager in the Delta Quadrant or did the show not yet start?
TOS - Where no man has Gone Before. Sulu is not the helmsman at this point he is chief of sciences or something, what is his official title (damn Netflix, I'm waiting for the DVD of this ep to do more research but I'm getting tired of waiting gor my next shipment.)
Dr. Piper is the Chief Medical Officer - what is his first name?
Did Dr. McCoy know James Kirk before the Trek series or is it cloudy on this issue? In other words, do I get away with them having known each other in the past on another assignment or no?
Thanks for anyone's assistance on this matter, these are little nits that are bothering me as I write the next chapter.

For the Picard...I believe Ent-E(this is more off of the factor that Worf is on the Defiant in ST:FC, and the war ending before Insurrection)
Voyager- Delta(they mention that the Maquis are destroyed after they go into the Delta Q)
Sorry can't help with the rest...though the McCoy thing is nagging me...

Vonda McIntyre's 'Enterprise' says McCoy knew Kirk, but it's not canon.

VGR had been in the DQ for about three years at that point (~2374,
I think). Picard was in command of the E-E, and the war begins
in "Call To Arms," the fifth season finale. Stardates from "ST:FC"
and the sixth season's second episode, "Rocks and Shoals," indicate
the former's events take place around this time; however, in the mid fifth season, Sisko mentions a recent "Borg incursion" ("In Purgatory's Shadow" IIRC). Did the Borg attack twice within about nine months, let alone hit Starfleet hard enough that Sisko mentioned their losses as a reason for Starfleet being "spread pretty thin"?
I wish I could be of help with the TOS stuff but my recollection of them is pretty hazy...

Deep Space Nine was abandoned in "Call to Arms" (Stardate not given), which took place in 2373. The USS
Enterprise (NCC-1701-D) was destroyed at Veridian III in
Generations (Stardate 48650.1) in 2371; Captain Picard was commanding the
Enterprise-E in
First Contact (Stardate 50893.5) in 2373. The USS
Voyager (NCC-74656) was lost in the Badlands in "Caretaker" (Stardate 48315.6), also in 2371.
Mark Piper, M.D., was chief medical officer and head of the Life Sciences Department aboard the USS
Enterprise (NCC-1701) in 2265, according to "Where No Man Has Gone Before"; he was relieved by Lt Cdr Leonard H. McCoy in 2266.
According to the
Official Site's biography, Lt Hikaru Sulu was "staff phsyicist" or "astrosciences physicist" prior to being transferred to the Command Branch as helm officer in 2266.

Wasn't Sulu a "botanist" in the pilot?

If you want a non canon source you can refer to Battle of Betazed, where the E-E is in service and crew members of the Enterprise work to free the planet from its Dominion occupiers.
EDIT: Oh and Voyager is in the Delta Quadrant, seeing as how they eft from DS9 well before the war started, plus Voyager had no idea of what the Dominion was or that war had begun when the Ships doctor made contact with the Andy Dick doctor on the Prometheus.

You can use the uniform change of season-5 to partially figure out what happened in First Contact. We know that the Borg incurrsion happened just a month after DS9 got the new uniforms. Sisko makes a statement about the Borg even. So Picard is in command of the Enterprise-E prior to the start of the Dominion war. The Enterprise-D was lost the same time the Defiant arrived at DS9, the same time that Voyager was lost. Those events all happened a few months apart.
