What do we actually know about E-B, besides who it's Captain was, what ship class she was and what happened on her maiden voyage? I was wondering why they would replace the E-B with an Ambassador.

Perhaps the leap in or a major refinement of basic tech, made them 'modernize' their fleet. When the Cardassian war erupted, they had to fill in the fleet with older designes and after the war, they just kept the status quo.

That is the full entry on the Enterprise-B in the TNG TM.The third Enterprise, NCC-1701-B, was an Excelsior class ship built at Starfleet's Antares Ship Yards. Although the decision to model this ship on the failed original expirmental Excelsior was at the time contraversial, the economics of using the existing (and otherwise successful) egineering of the basic spaceframe were compelling. The wisdom of this decision has been borne out by the large number of Excelsior class starships that still serve Starfleet in a variety of capacities. (Indeed, the Excelsior herself ultimately proved to be a distinguished part of the Starfleet.) The third Enterprise was a key figure in the exploration of the Gourami Sector. This ship and her responsible for the mapping of over 142 star systems, including first contact with seventeen civilizations.

Well the simple answer is that it was a modifcation on the design that was useful but not needed in large numbers. There were likely more then what we saw, but they were useful for other purposes and they stayed out of the war. The answer I came across was that the E-B was built as a testbed for technology to detect ships that can fire while they are cloaked. I has extra Impulse Engines for more power and manueverability. Its sensors were extra sensitive and it hade torpedos with the Heat seaking modification from TUC standard. you've got a point. In the Enterprise Incident Kirk goes through all this trouble to steal a Romulon Cloaking device and the Federation turns around and signs the Treaty of Algaria(or whatever) which make the Federation have or researching methods to detect Cloaked ships illegal. Kind of silly to send Kirk to Steal a Cloaking Device only to turn around a throw away the advantage by signing a treaty promising to give it back and not be able to take it apart. The Soviet Union once demanded the US return a defected MIG.
