what i can't figure out is why Wesley was sopping ass wet when he came out of the holodeck... I can understand him being wet to a degree but why was water that is supposed to be wierded out photons still dripping from him when he walked out???

We've seen matter from the holodeck survive outside before, like the time Picard was hit by a snowball from the hollowdeck while he was in the corridor.

That was an actuall snowball though and not a hologram. The holodeck uses replicators to make certain things and holograms coupled with force fields for others.

Something tells me that creating living organisms is beyond the capability of a Starfleet replicator, so your not likely to see Sperm in that Semen. However, it could be possible to create some of the Organic molecules that make up the components of Semen. However, even this is speculation as many of these molecules are still much more complex then simple frozen crystalized H2O.

IIRC, Data says in Encounter At Farpoint (mmm, "encounter"...) that the simple plant life is replicated.

EDIT: However, in the interest of discretion amongst fellow crewmates and for the sake of laziness, I would imagine the programmer would opt to make the semen holographic, so as not to leave anything behind that needs to be cleaned up.

They can replicate food. One assumes that if they tried they could, um, replicate a substance with the approximate texture and taste of semen.
