I agree with the slow-motion. There's no way that the filmmakers would have you watch: "look, there's the torpedo... no sorry, it's gone, you missed it. it was only one frame long."
Well, I'm not saying that the torps REQUIRED the Force, just that it helped a lot. And Dodonna believed the Jedi were extinct. Even if he didn't, how could he know Luke was one?
Of course the Force helped. It helped guide his hands and reflexes when he fired the rocket. It didn't help the rocket to do an otherwise impossible or even highly unlikely turn that obviously was necessary to have any hopes of hitting the damn hole. What's the point of even hoping a normal pilot will hit bullseye if you know that the torpedo is simply unable to do its part?
