Well, here goes:
Tug-of-war: Not too sure about this, but I guess Imperials since they seem more well- disciplined (meaning, they probably have to do push-ups or the equivalent every day).
Pugil: Imperials, because they are trained to have a much more militaristic mindset than the Redshirts, so even if they are unfamiliar with Pugil sticks, they are still more likely to gain the upper hand just through aggression.
Drinking contest: Not too sure on this one. Probably depends on the officers, but considering how the Imperials are much more manly than the redshirts, I'd say the Imps.
P.T.: see tug-of-war. It also depends on the type of officers, too; shipboard and higher-ranking officers would probably not be as good as, say infantry (stormtrooper officers, etc) or those deployed on the death star or a planet's surface.
Cage match: Again depends on several factors. If the imperials start getting clever with the use of certain leather accessories on their uniforms such as belts and gloves/gauntlets, and if their boots have features such as steel toes, hobnails, or heel irons, then definitely the Imperials.
