On the ship maybe. Still... Spock is not the smartest, strongest, or most dangerous person out there.
"Spock can't escape" might be a "Holy crap that's tough" to the crew, but to the entire star trek galaxy? It's a "Meh." I'll watch the clip but didn't that cell also use forcefields only?

Spock said they used the most intelligent and resourceful person they could find. Presumably Spock had prior knowledge of the circuits in the ceiling (or had someone else assist him in testing), since Kirk could only reach them by standing on Spock's shoulders.
