Turn it into an atmospheric pleasure craft, pension off the crew, and park it across from Ambidala's quarters on Coruscant during the events of Ep I.

The D would have been better for that. It's colors fit a brothel better. The E is a bit more military drab.

Careful, there's a contingent out there trotting out the idea that the warp core breach at the drop of a hat syndrome is endemic to the GCS alone.

Hmm the 'historic relic' ships the Empire keeps will probably be the glorious Miranda, Constitution and Excelsior classes, so I guess you can just recycle it.
On the other hand, perhaps there are people who would like to travel as slow as shortly before the foundation of the OR, during the days of Xim?

Like Riker once said, just rename it to The Love Boat.
Then use as the original designers intended it for: a pleasure cruise (Ten-Forward would have to be expanded though.) one of the stops would have to be Risa, which is supposed to be a very nice resort (I don't know what makes it so nice)

Maybe. But I doubt they would let something like that slip but when every other design is safe and stable. You'd have to be an idiot to design something so fatally flawed and a even bigger idiot to allow it to slip past. My guess it that in the newer (less safe designs) they traded a better power output for decreased saftey margins.

And of course, there things like the ships flying apart without the SIF. The fact that it has an incredibly volitatile fuel source.

In short, the Ent-E has so many flaws that no Imperial safet inspector would allow it to ships paying passangers.
