I would expect those big price jumps just from plain ol' inflation. Time goes on, and stuff gets more expensive. That's the way it works.

Not really. Idiots would kill themselves by chopping off their own limbs, and experienced swordfighters who are more physically fit would run around killing us all.

Plus, without the force we can't fight as well as a real jedi.
