The trick to stopping boarders, at least with Covie craft, is to hit the boost well before they get close. The Ghost can send people flying, and the Wraith can turn them into little grease spots if you time it right.
As for the Banshee, a quick barrel roll is a good way to say "fuck you" to a would-be hijacker.

Brutes and Hunters aren't powered up that much (to be honest, the Brutes seemed easier to kill, but that's probably because it's easier to wear them down than Elites). Although, the last level where you get the Hunters fighting alongside you, they were hit in the face by an ungodly amount of firepower and still beat the shit out of all the Brutes in the first room. Then they were stupid and tried to take out the next group from long range.
Councillor Elites=God. Tartarus went head to head with one and had to hit it twice to take out its shield. Too bad that they're dumbasses and kept trying to kill Tartarus with swords.

If you think Legendary is hard, there are Oddballs hidden around the single player levels, usually on Legendary
The one in Cairo Station makes every Elite upgrade to Spec-Ops with Dual PRs and a Sword for up close, and every Grunt upgrade to Spec-Ops, also. Not sure what it does on Elites that are better than Spec-Ops.
One, "Assasin", in Regret cloaks all enemies. Allies can never see enemies now, even if you're shooting them.
The one in Great Journey ["Blackeye"] removes your shields and slows you down on Legendary.
Cairo Station has "Thunderstorm" which makes Covenant Vehicles tougher
Gravemind has "Angry which makes enemies fire extremely fast
Other, different ones do some amusing things
