Yeah. You're going to need a graphics card with video capture ability (you could probably get a stand-alone capture card, if you look for one), and you're going to need to run your console's sound out to your sound card's microphone input (or get an expensive sound card that takes multichannel input). Then you need software that can play/record video from the video capture card and grab the sound.

The easier thing to do, IMO, is to get a DVD recorder (the ones for home theater systems, not for the PC), and wire your console directly into it. Then all you have to do is record your game, then put the disk into your PC's DVD drive. This should be a cheaper, less complicated and probably more flexiable solution.
Artillery. Its what's for dinner.

DVD recorder cheaper? No way... A few years ago I had a Radeon card with video-in, which I got for $60 then. The only other thing you need to record are the patch cords, stereo RCA -> miniplug for the sound and RCA or s-video for the video. Recording program that I had came from ATI for free. Actual recording was really easy (hit record button and it records. ~_~)

try FRAPS, even if you must 'aquire' the new versions, very nice, and while it does drop framerates somewhat, it outputs good quality.
