Thanks for the recommendations, everyone!
I ultimately went with Assassin's Creed 1 and Lost Odyssey. SR 1 & 2 and RDR are ones I'll likely get for myself at some point anyway, so I focused the birthday picks on games that are more specifically her speed than mine.
I'm not too worried about the story wackiness with AC. My wife likes playing through story missions in different ways but is pretty good at shrugging off plot stupidity and getting back to the game. It annoys me more ("We're on a race against time to save the galaxy! Let's stop and check out rock samples!" WTF?) but I've learned to have some fun rewriting those things in my head as an intellectual exercise . Ironically, we're the opposite with movies...
I'm glad to hear that the SR games are GTA without the annoying shit. I still go back and and spend a lazy afternoon or two playing GTA III and Vice City maybe once every six months and San Andreas about once a year, but GTAIV got played through once and sat on my shelf collecting dust afterward.
We've already got Oblivion and Batman: AA, so good call on those. Mass Effect was a bit too much shooter-oriented for her tastes. Thanks for the warning about the DA:O expansion. Maybe when it's available for $5 somewhere...

It's okay to kiss a nun; just don't get into the habit.
