So about this 360...

My current situation: Took advantage of a steep discount to buy a used 360 (built in October 2007 with a Falcon or Zephyr motherboard) with 1-year in store warranty, as my previous one (built in 2006, modded, I'm told with a Xenos motherboard) red-ringed. But how exactly do I check to see that it's not modded short of going on Xbox LIVE? And what's the canatometer??

I'd simply burn a game and try that, but when I press the disc tray button just hear a noise that seems as if the tray is stuck, and I'm pretty sure it's not from the faceplate being misaligned. (I already have this problem on my PC.) Any way I can force it to operate without having to get it repaired?

Look on the back, there will be a seal sticker. If that's intact, it should be OK.

Which sticker? There's the one above the power port, the serial number sticker (one short hole at the end nearest the hard drive, one longer hole near the vents in the back), and the U.S. patent sticker.

This may be a moot point at the moment, as it seems that when I press the disc tray button it sounds like the tray is stuck... any way to fix this without violating the warranty/getting the Xbox LIVE ban?

...Take it back to the store and say they sold you a broken console? If you have a 1-year warranty and the disc tray wont open, don't even bother dicking around trying to troubleshoot. Just take it back and pitch a fit.
