I'm planning on using an extra hard drive to install Linux on. With that in mind, will it dual-boot correctly if I use both hard drives at the same time?

Also, if I uninstall Linux on the extra hard drive or take the extra hard drive out, will my original XP installation still work fine?

You can do this. The bootloader included should automatically make things work.
