For those who have played this game, what level do you aim to reach with your initial class (soldier/scout/scoundrel)? Level 8 seems to be how it was designed, but is it possible to leave Taris at a lower level so that you can get more levels of Jedi classes?

not to level up.
You can stop leveling up after whatever level you want to and continue to accumulate XP. As such, if you decide to stop leveling after you hit level 5, you can play through Taris, wait until you become a Jedi and then gain whatever extra levels you have stockpiled.

Well depends.
On your first time...go to 8th level. It helps you a bit more to have the HP and skills.
Later on...you'll see how to cheat battles(there are things you can do that'll screw with how the computer reacts to what you do) and what not and leave at around 3rd or 4th level.

Don't know if this is either way too obvious or a spoiler, but keep the heck away from ranged feats
(only for the main char and Jedis, customize the others as you see fit... not that you'll use most of them
)
Oh and in the end you find out that (massive spoiler) you're Yoda's grandfather.

My first time around I was level 8... second time left at 5, and for my dark side round I'm looking at 5 again.

Stay away from GameFAQs' "character development" FAQs. They just throw huge spoilers at your face without warning. Like (not a real spoiler), forget about befriending Leia's dad cause Alderaan is gonna blow up anyway
But really, just be a level 4(or more if you need to) Soldier/level x Guardian/Consular. Sentinel is just meh, don't touch "scoundrel" because most of his skills are useless anyway and his combat skills suck majorly - and you WILL need to make 1-on-1 combat at some point in the story. If you can pick a lock, you can ALWAYS break it, specially with a lightsaber. Even Carth can pick most locks, and he has like 1 in security.
You can try Scout if you really think you want to play it the Repairman way (fixing robots, overloading consoles, etc) but really skills in this game are 99% useless, unless you want to recover every single mine in the game and sell it for a few pathetic bucks. Not only are skills useless, but as a Jedi you only get 1 or at most 2 points per level, almost every non-combat skill is cross-skill, so you'd have to play as a pretty high-level Scout/Scoundrel to even hope to have decent skills for anything, and then you miss on the Jedi part and feats (Jedi defense and Lightsaber use specially)
Damn, this game with Fallout-like skills (or pretty much any other skill-based system) would have rocked...

I am attempting to get through the Soldier part as a lev 2 I want a lev18 guardian, but it is hard!

Level 4 is quite doable. You can even complete the Taris Duels with that level. Just say YES to plasma grenades. And it's quite worth it in terms of being a Level 16 Jedi Guardian/Sentinel/Consular by the end of the game. Lots of extra powers, and you get lightsabre proficiency that much quicker.

Scoundrels get sneak attack and a nice defense bonus. My Scoundrel/Guardian
did more damage than my Soldier/Guardian.

Yes, but there are situations where you have to fight one-on-one, like the arena duels (optional) and some "boss" fights (first is not hard, but not optional either. the final battle can be nigh-impossible).
Unless you can just cloak, hit, cloak, hit, which would be really silly, but I haven't tried it so I can't tell.

Scroundel certainly ain't worthless in combat. At normal difficulty I had no trouble whatsoever, even if I was alone against more than one force user. The final battle was a bit tricky, though

Firstly, you can use medkits from the inventory screen, meaning you don't lose a round like you do when you use them from the main screen. Cool bug.
Second, you better have some sort of offensive force power to hurt Malak's advantage. Or to take advantage of it yourself like he does.

Didn't work for me.I try that in combat, I'd get a message along the lines of you already took an action this round bla bla or something to that effect.
HOWEVER, you can use them to your heart's content OUTSIDE battle, so you need a way to get away from Malak for a time so combat mode will end.
Force Speed is your friend.

Stuned opponents will suffer sneak attacks and the Scoundrel/Guardian get hit less
often than a Soldier/Guardian.

I noticed that whenever I threw a lightsaber at him, it inflicted damage. Always. I just did my best to keep some distance from him and it worked.

I had PM-ed Zak what I thought were good techniques to beating Malak. I'll share the general technique here:
Use each type of stimulant before battle. When you enter his chamber, and the cut scene plays, pause the game. Disengage from the fight and open your inventory. You can use as many items as you want. This probably works if you need to use med kits as well. The key is to disengage from the battle. The other technique was spoilerish, so I won't share it here.
