DeusEx music

Anyone knows how to extract the music from the original DeusEx?

You need the Deus Ex SDK, which should still be available from fansites. Install that, then open up UnrealED. In the rightmost pane, select "music" from the dropdown menu next to "Browse." Hit the "Load" button, and load up all of the UMX files from the Music subdirectory of your Deus Ex install. Now, select the tracks you want to export and hit "Export." This will convert them into standard S3M files (samples and sequences), which are playable in Winamp. I'm not sure how to get the combat and death music, but this will grab the level music.

BTW ... can that s3m format be converted into mp3's or waves?

That's kind of like asking if you can convert a MIDI file into a wave. You can do it by recording the output (via Winamp's wave-out plugin), but there's not much reason to in most cases, and you can't convert directly as S3M isn't a direct recording (like WAV or MP3 are). I actually was kind of surprised that Deus Ex used S3M, as I haven't seen them in common use since the days of DOS and Windows 95.
