Let's say I'm selling something on Ebay and don't want to be p-p-p-powerbooked. Is it a good idea to wait until the item is in my bank account before shipping? Is it possible for them to "unpay" or something if the money's just sitting in my Paypal? I see people with "I will ship when the money is in my bank account" (emphasis theirs) in their auctions. :?

I've never run across anyone unpaying (I'm fairly certain this is not possible as I have both purchased and sold on Ebay and the option was not available to me.) the issue I think these bank account people have is with Paypal. Last month paypal went down for days and fucked quite a few people, including me, because we couldn't get our money or transfer it to our bank accounts. Alot of people decided after that to immediately transfer any money through paypal into their bank accounts. Not keep anything in there is the general consensus from the pissed folk.

That's probably what's at the heart of this.
