Slash! Smash! Crunch! Soul Calibur 3!

So Sayeth Gamespot
Quick details:
Later this year.
PS2 exclusive so far.
Three new characters at least.
Some kind of create a fighter mode.
All the usual game modes.
No word about online play.
The sequel to the sequel to the best fighting game ever. Yes.

DoA was great, but this one has the ability to create your own character and weapons. DoA's combat was much better though, IMO.

This original feature will let you create your own character by choosing its sex, occupation, weapon, and some physical characteristics. Once you've made your virtual self, you can take the character into the chronicles of the sword mode, which is billed as a real-time simulation that lets you watch your character engage in battles. Although the info provided on the mode is a bit sketchy, we expect that it may be similar to the artificial intelligence mode seen in Virtua Fighter 4.
Don't get your hopes up on create a fighter, it looks like it's just the "Tamogotchi-fighter" again.

I always thought DOA's system was a llittle clunky compared to SC's. At the least, it reminds me too much of Tekken's emphasis on timing.

While that's true, I loved the ability to easily counter an opponent's attacks. Many times if you got up early in the match you could actually psych your opponent out into NOT attacking you for fear of the easy counter.
