Well for me, anyway, the image I got of MC's orbiatal defenses and shipyards was of the shot of the Jem'Hadar/Breen's would-be-last stand at Cardassia Prime in What you Leave Behind.

You mention that Fonder was probaly the 3rd best Shipyard in the Galaxy, and it was superior than MC yards(which are superior to Bilbringni) so I asume Kuat is the largest shipyard. But which comes second?

I believe the EGtPM stated that Fondor's shipyards were second only to the shipyards at Kuat and Corellia, thus making it the second largest military shipyard in the galaxy, as CEC produces for the most part civilian and commercial craft. In Jedi Eclipse, it is also stated that the Fondor Yards (building 30 DSDs and several thousand other warships at the time) were operating at a much lower production rate than during the height of the Empire, meaning that when the Emperor was still in power, they produced several times as many ships.
