The "Jedi Religion" in the Australian and UK censuses (censi?) were publicity stunts (a way of protesting religious profiling & the census in general). It's akin to putting "Mickey Mouse" for your religion, or "Purple" for your "Race/Ethnicity." Those records are simply thrown out, and the number of "Jedi" entries a mere curiosity.

From what I gathered, it's just (Zen) Buddhism with some Star Wars terms tossed in for fun.
There's people out there that think they can throw "energy balls" like Dragonball Z if they concentrate hard enough...
And who's to say that "Europeans" don't visit this site? ; )
