In the Thrawn trilogy Pallaelon is described as being middle aged and he was in his late 50's at the youngest.
Obi-Wan may be getting old for this, but he is still up for it. I suspect he used the line to real Luke in. Boba has the credits to pay for first rate medical care in a galaxy that has first rate cybernetics and cloning tech.

As for medical care and all that-- true-- however, medical care still ain't gonna change the natural progression of aging in the human body. It can retard aging to a degree, yes, and reinforce the body to a point, but only that: to a point. The upper age limits of SW humans is much the same as what we have already, just by a few more years: 100 to 120. We're not too far away from that-- centarians are everywhere, and it's not at all unknown for people to be older and still thrive (Jeanne Calment, the oldest authenicated person that we have good evidence for in recent years, was 12-something when she died).
You can take care of a person all you like... but aging will catch up to them eventually, like it or not. Add into this that both Han and Boba had pretty active lifestyles, and in Fett's case, a rather dangerous one... while that kind of life will keep one in pretty good condition, it also contributes to wear and tear. It's no wonder that Fett contracted cancer, and equally, just as much no wonder that he was able to get over it.
It's a strange world. Let's keep it that way.
NJO is about 25 years after ANH. Assuming Luke was 18 in ANH that puts him at 43 by the start of NJO. Assuming Han is 10 years older. Afterall he went to the Imperial academy and spent quite a lot of time smuggling. That puts him in his early 50s by NJO starting.
Wedge was 29 years old just 2 years or so before the Thrawn Trilogy, and TT is 10 years after ANH. So that puts Wedge at 21 in ANH and is going to be 46 or so in NJO.
The main SW characters are aging, out of their prime, but still young enough to be quite capable.

As to the age thing, who knows, but all the dudes we see whipping butt at such an old age are Jedi/Sith (well, I can't speak for the entire EU).
Boba Fett, all we saw was him fall in the sarlaac. In the book, he used a thermal detonator to get out.
Darth Maul, on the other hand, we saw in two peices falling down a shaft.

I wasn't arguing that they would be in top shape, I was agreeing that they would have suffered some physical deterioration, but still be capable of kicking some but.
BTW I have a couple of aunts and uncles that recently passed the big 60 and they are pretty good shape. They aren't 30 anymore, but still fit and active. Kind of encouraging for the future. Anyone else with disgustingly fit older relatives?
