Could Sidious/Palpatine take over the galaxy and overthrow the Jedi without Anakin?
I mean, outside of the debate of who was actually winning Mace or Palpatine in their fight, it is Anakin who alerts them that Palpatine is actually a Sith Lord which causes them running to his office.
Could Sidious just have kept using Dooku as his Sith Lord enforcer?
Could Sidious succeed without Anakin? (spoilers)

Yes, Palpatine would still have won. He had the entire republic army and navy , along with the Senate in his back pocket. Anakin was just the cherry on top. If Anakin had actually tried to kill Palpatine when he revealed himself to him. Sidious would just have killed him and used that as the catalyst for his "the Jedi are traitors" plot. It wasn't necessary for him personally to kill the Jedi Masters, that's just a bonus.

Palpy is the ultimate wheels within wheels SOB. If Anakin had either not fallen or died, Palps would have just moved on to plan XYZ, whatever that would be. One thing to bear in mind is that while Order 66 takes out pretty much all of the surviving Jedi, there were numerous dark Jedi and outcasts from the Order running around in the chaos of the war, and likely he already had the next best replacement picked out from among their number.
