The main problem with using any sword one handed is
1. The overal weight
2. The point of balance of the blade.
3. Precision (which is more a matter of personal skill overall)
With a lightsaber, there is no idication that the "blade" has any wight and if that is the case, the point of balance issue becomes far simpler as the balance point must lie within the grip. This leaves only one final issue, that of strength, compared to your opponent...in order to block a blow you must be able to meet it with equal force (do note there is a world of difference between a block and a parry).
I still would suggest that a pair of lightsabers would be more useful generally...though a blaster proof shield would make the saber practical in a fight for a non jedi.

Only problem with a blaster proof shielding or any shielding is that while you have the possiblty of hindering the blade...it does nothing to the weilder.

I guess I should have been a bit clearer what I meant for use by non-jedi.
It would allow a non-jedi to have some success using a lightsaber against other non-jedi/blaster armer opponents (though i shudder to think what flechette launchers might do. Rather than attempting to duel a jedi that way.....with the abilities of the force, enhanced speed and precognition such a fight can only really go one way....
