In a thread called "how would you do post RoTJ EU" personal likes and dislikes are perfectly valid, compelling it might not be but I'm not really trying to convince anyone my stance is the only and most superior. Not that I'd really cry tears if someone did kill off every movie character. At least then you'd have to invent new ones. Or if outright not kill them you should keep them way in the background. RoTJ to me ended their stories for all points and purposes. Luke was the hero, scoundrel got the princess, day was saved, hurrah etc. etc. They had their day in the sun now move over and lets hear about other heroes. Killing a character has a certain finality to it though and it's a statement saying "No he's not coming back"... well unless you go all Maul on him.. which I would never do. And while the Imperial remnant might be better than those alternatives you've mentioned, and you could write some good stories with them, I'd like to see some other villains as well. A bit of diversity never hurt.
I think you misunderstand me slightly, I'd use the remnant as a piece of the setting for characters who can be heroes or villains and to counter balance the New Republic. Just like the New Republic has it's ideals, goals etc. You could have a differing set of ideals goals etc, which sometimes are opposing each other creating conflict and give definition to characters.
