So, the guns of the Slave1 can be set to a lower power settings. The guns of Anakin's fighter also did not produced large explosions. So I higly doubt that this feature was left out from the guns of the X-wings. (Besides, if those guns are so powerfull, why the AT-ATs do not carry them? It would be far more effective than shooting the troopers one by one.)

Icing can be a problem for a speeder that uses aerodynamic control surfaces, not for a starfighter without those.

The new Queen's yacht, the one that blew up, included four recharge sockets in the leading edges of its wings. The tail booms of the fighters fit into those ports, allowing the fighters to recharge their power systems off those of the yacht. That way, the yacht could make the hyperspace jump to Coruscant while carrying a flight of four fighters. Without such support, the fighters would have been limited to jumps of no more than 1,000 light years and would have had to travel in steps accompanied by a tanker. (AOTC ICS)

The guns of X-Wings, at least in the EU, can be set to something I believe is called stutter fire (not having read the books in question myself). In effect, for short range fire, especially against ground targets, the X-Wing can fire a rapid sequence of relatively low-powered bolts instead of one large one. The shots are supposed to be quite enough to blast masses of fully armored Yuuzhan Vong troops to carbonized confetti. The thing is that the firepower of individual bolts seems more on a par with that of Rebel snowspeeder weaponry, so that it should be largely ineffective against heavily armored targets. Someone more familiar with the relevant EU stuff might have more useful information.
