X-Wing, preferably the XJ-variant. Rugged, reliable, and the only one with real aerodynamics in case of loss of engine power. It might be able to glide. A TIE would drop like a rock. My second choice would be a TIE Avenger. Faster than an A-Wing, has the firepower of an X-Wing with roughly the shields of an A-Wing.

X-wing. It's a nice all around fighter, and the upgraded versions aren't significantly inferior to the TIE Defender, based on Wedge's comments (or another one of the Rogues) after flying one.
Second place is a three-way tie for TIE Defender, A-wing, or B-wing. The Defender and A-wing are fast ships, and the B-wing is so heavily shielded and gunned it'd be easy to feel safe in it.

I'd want an A-wing (assuming we're talking about today, not in the SW-verse). Shields are enough for anything that will be thrown at me, its fast, and its got a good view

If we aren't limited to SW fighters then I'd take a Stealth Alpha Veritech and re-form Skull Squadron.
For long rang or "Freight" missions I'd convert a corellian corvette or a carrack sruise and turn it into a spacefaring party. convert the cargo bays and all but one of the hangars into dance floors, add a big pool somewhere anddouble the size of the Captain's suite to accomodate my Twi'Lek dancing triplets
