None of the cutaways we see of ISDs preclude the existance of farms. Farms could reside on any of the anonymous decks depicted in the various cutaways. Ultimately, having dedicated cargo tenders hypering from the ISD to the supply base makes the supply train almost unassailable. Hell, they can be assigned to the supply bases and go out to any ship in a certain radius that needs resupply.
As for downtime and training, an ISD is, effectively, a city of 50,000 people, with a pop density probably close to that of an urban center. Since they can be on patrol for years, I find it impossible to believe there are not both entertainment facilities(Hell, one can easily imagine a 'Red Light' district slowly growing near the engineering space), and training facilities onboard.
And about entertainment, you're right, there are certainly entertainment areas onboard. The Stele Chronicles (notes from which can be found at Wayne Poe's site) indicate that there is a shopping mall-like area somewhere in an ISD which caters to soldiers off duty and to the various civilian personnel (who are employed by these entertainment centers, presumably).
