I have read, that the original homewold of humanity was totally devastated in a great war, and that it was slowly forgotten after that, when humans moved on.

There was an "ask the jedi council" question about this on the official site just a while ago. The answer was that its an ancient race whose origins have been forgotten.

Is there any info on what Coruscant was like before it's surface was completely covered by buildings? Was it 'earth-like'?

One possibility, though cross-universe, is that the humans in the Star Wars galaxy were relocated to that galaxy by the Asgard. If the easter egg rumor about Episode III turns out to be true, it could spark some speculation.

Because ILM is the only VFX house working on Episode III, and they had nothing to do with anything concerning StarGate or SG-1.

Are you sure? Work is very often farmed out to other places, even if there is only one EFX house officially working on a film (another example would be WETA and LOTR -- they farmed out some work).
