Since the screenplay says it is in fact BT-16, it is more than likely they were talking about the BT-16 perimeter defence droid. In ROTJ BT-16s were acquired and used as hosts for the brains of B'omarr monks which are the original ocupants of Jabbas Palace.

The closed captions vary from edition to edition, and aren't always reliable. I've always thought the stormie said VT-16. In the Swedish subtitles (where it has been translated) both for television and video the interpreter has written VT-16. I have never given it much thought, and it's quite difficult to hear what the trooper says. It will be interesting to see how ANH is subtitled on DVD, although I virtually never use the subtitles.
However, according to the Annotated Screenplays (pg.76) the Storm Trooper says BT-sixteen. It's interesting to note that Bouzerau has missed pieces of the scripts in places and that some passages contains small errors.

I know that there are a lot of lines and sound effects in the movies that have been changed from version to version of the films. The Insider mentioned this several times before. Are the screenplays the absolute canon source? Or is it that each new version of a movie overrides the older one?

The more recent version of the films override the older versions, while the screenplay is directly below the film in the film in the Canon Hierarchy.
