Let me put it this way: you have two plastic baggies full of goop. One you cut open a bit with an incision and the goop poors out. Now, why would goop not poor out of the other baggie if you just snipped it in half?

Lets take a really hot knife senerio. You run the knife along the out side of the package(and knowing from work when you cut somethings guts and there is pressure, they tend to spill out) sides rip, and the contents come spilling out. Now you do the same with a corner, less pressure, smaller cute, the knife seals the to sides of the plastic. Basically what Bunny said. Obi-Wan chopped Mual completely in half at about the bottom of the ribcage, while Han just sliced open the skin on the Tauntaun's belly. Even though there is still total cauterisation, there's still the fact that there's a hole across the animal's belly, which is why its intestines spill out.
The key things are both cauterisation and manner of the cut. That's why Maul's organs don't fall out and the Tauntaun's do.
