There's only one time I've seen stormtroopers wearing a color other than white. During a mission on the planet Talasea (has anyone read Rogue Squadron?) a platoon of stormtroopers wear slate gray armor. Corran Horn recognizes the armor's significance:
Looking up he saw the snout of a blaster carbine poke through the doorway. A left leg encased in the slate-gray armor worn by stormtroopers on commando missions followed it.
Slate gray, being a dark gray, would be hard to see at night. hmmm.......hard to see.......camoflage!
