The impression I got from Chapter 20 is that his enhancements allow him to best Padawans or Jedi Knights of relatively low skill, but not seasoned Knights or Masters- Ki-Adi Mundi was about to fight him alone at the end of Chapter 20, and we know for a fact that he survived- against a General Grievous with 3 sabres (holding one with his foot).

That's also something that annoyed me about CW: Other than troopers (when their guns weren't just shot out of their hands or knocked over) and droids, virtually nobody died.

Nor does he use any force-powers when he fights, it's more like he seems to be able to counter the force, or atleast lessen it's effects so they cannot do things to him like puree his organic brain, toss him into the sky, make every nut & bolt in his body unscrew, etc.
Griveous unnatural speed is also a great leveler, hemust have enhanced mental abilities to be able to use it effectively though.
It might be that the species Griveous comes from has Ysalamari like properties as well, possibly not like that, but maybe similar, maybe a disruption like field effect that makes it more difficult for jedi to use their abilities.

Now I see how wrong I was to think that a technology to render one immune to the Force (an all-encompassing energy) would be used in clone trooper armour, combat droid construction, house insulation, that sort of thing.
