I second Nigel Bennett, Gary Oldman, and Christopher Walken. NB circa Forever Knight would have been great. Even had the voice.
For Sith Burds, Sharon Stone in her prime, Deborah Duchene, another FK alumnus, and Famke Jansen (thinking more of Goldeneye rather than the X movies). Maybe Gina Gershon as well.

However, that is a good point. It also gives us the likes of Christopher Walken (who has been mentioned), Donald Pleasance (who hasn't been mentioned, but would make a cool Sith), and Christopher Lee. And I don't know about you, but something tells me that Christopher Lee makes a cool Sith.

Sam Neil - I think he would be great as an charismatic republic officer who goes completely unhinged and turns sith.

I also think that Duwayne Johnson (The Rock) would make a pretty bad ass Maul type sith.
