I'm looking for any and all information on the Anzati race. Physiology, history, lifespan, any and all information you have or can dredge up.

Look in Tales from Jabba's Palace and Tales from the Mos Eisley Cantina. It's the best you're going to get.
Essentially, the Anzati can live for thousands of years and are extremely rare, for unknown reasons. They are almost entirely human, except for their probosci. I think their relative scarcity was explained because few of them ever made it off of their planet, but I don't know why. I also think that it was implied that the Anzati were relatively primitive, and that they had not really acquired interstellar flight, except in very small quantities.
Also, they remain to themselves as much as possible. The longer they can pass themselves off as human, the better off they are. They are significantly stronger than people, but they appear not to be either as intelligent or as dextrous, as demonstrated by their not using ranged weapons or other things. It may also be a matter of honor amongst them to hunt their soup the honest way.
I know it's not much, but I don't think that there has been much written about the Anzati. Sorry.

There is also a bit in the Essential Guide to Aliens and Species about them, and an artical in SW Gamer #1.
Interestingly, the Gamer artical describes them as "the first Sith"

the Anzati apper in the Darkness SW on going comic series. issues 32-35
in it they seem to suck out and eat the memories of soul of their victims, they can be Jedi, thats all i really got out of the Darkness series.

The first Sith? I thought the comics revealed a specific person as the first Sith.
