The Games and Canon

Do we count the SW games as canon? Especially X-Wing, TIE Fighter, XvT, X-Wing Alliance, Dark Forces, Jedi Knight, and Jedi Outcast?

Especially since the games are made by a Lucas company (Lucasarts)

You should just make one big thread with all your questions in it. It's less annoying than starting multiple seperate ones and having them littered throughout the PSW.

To answer your question: The events in the games are canon, the game mehcanics are not.

Video games are the lowest level of canon and pretty much anything not apocryphal overrides them. But they usually don't contradict the rest of the EU.

The Dark Forces series: Soldier for the Empire, Rebel Trooper (or something like that) and Jedi Knight.

Kyle Katarn is briefly mentioned in Force Heretic I: Remnant. So he still exists within continuity.

That would make X-Wing non-canon if the story supports that a generic career pilot destroys the Death Star. Same with Alliance... what would the policy be then? I think we could consider original stories canon, and some of the general events that happen. In other words I think we should doubt everything but not say it's bullshit outright.

This is in the canon quotes list at the top of the page, stickified. In short, games count as part of the continuity insofar as they do not conflict with canon. Furthermore, game mechanics are not part of the heirarchy.
