Those Anthologies...

Y'know, Tales from the Empire, Tales from Jabba's Palace, Tales of the Bounty Hunters, etc...

How do those fit into what is official and what's not? IIRC, they're just compelations (sp) of stuff from the SW Adventurer or whatever it was.

If they're at the same level as EU novels, then there's some funky shit going on out there... Though AFAIK that's mostly the infamous IG-88 story. I don't remember anything else being horribly outlandish. Though the Boba Fett story (in, I think, Jabba's Palace) and I think the Bounty Hunter Wars trilogy conflict in what Boba does post-ROTJ.

The "Tales" novels are usually placed in the Star Wars timeline by the events that usually repeat themselves in each story in that Tales book. And answering your Boba Fett question on its conflicts with the Bounty Hunter Wars Trilogy besides K.W.Jeter not knowing how to write but the "Tales" or anthology books are just that...'tales'. Some even come out with it saying The Wiphids Tale in "Tales from Jabba's Palace". Its simply some people are just telling stories to whoever was the "maincharacter" who was interviewd and no one really ever knows him. And the people in Jabbas palace are not tobright except Jabba.
