I assume that Darth Vader, a Sith Lord proficient in the ways of the force...including telepathy... could just look at Leia andknow that the Rebels were at Dantooine.

And the fact that she was certainly strong willed probably prevented him from obtaining the infomation. Remember, the mind tricks don't work so well on strong willed individuals. Between her strength of will and most likely quite a bit of training to resist interrogation I doubt he'd be able to casually pry the information out of her.
The line "Her resistance to the mind probe is considerable" could mean his Sith Mind probing using the force. I don't think that the Empire has mind probe devices. Her being force sensitive made it easier for her to resist.

Actually they can scan people's brains and create complete copies of there memories to make clones. I think the novel or the radio-drama also speaks about Leia being trained to resist interrogation.

Actually, ANH and ROYJ seems to prove conclusively that any type of mind reading, even by a powerful Sith lord, only works upon those who also actively use the Force.
As we have seen, Vader couldn't read or pry information out Leia's mind with any type of success. She had no Jedi training of any sort, and may not even have been aware of the Force in any manner other than from casual remarks by others(ie: "May the Force be with you", etc). Yet Vader was able to read Luke's mind quite effectively, prying information specific enough that he found out Luke had a sister and cared deeply for her, and even posibly her identity. Unless we are going to assume Luke Skywalker is some weak willed pussy, than the only conclusion I can think of is only active Force users are particularily vulnerable to "mind reading". Unless I'm missing something.

Luke's emotions were quite strong (his incomplete training did not allow him to supress them effectively) and he was essentially broadcasting his thoughts. It would have been rather trivial for any Force-trained warrior to pick that up.
However, that does not mean that the 'target' must be force-sensitive for this to work. Indeed, the EU presents various events of Force users using telepathy.
