Perhaps the knowledge that the asteroid was Eros can help to estimate the strenght of the asteroid-shattering blast. It gives a bit of insight on the size and scope of the field itself as well. I haven't been able to find any updated data from the Shoemaker probe on Eros, but perhaps someone else knows it.

Size: ~ 33*13*13 km.
Its about as dense as the Earth's crust.

Yeah, I've seen those figures. I've also seen 34x11x11. I just rewatched the scene, and it's clear that the explosion is much, much larger than we previously thought, perhaps a 300 km radius. It also gives both Slave-1 and the "Jedi starfighter" pretty good speed, particularly since the chase is in a very, very dense asteroid field.

EDIT: Uhm, curse my memory. I had in the back of my mind a thought about this being planetary rings and not a field, which explains the density, but I didn't confirm it until I rewatched that part.

EDIT2: The second explosion took about 7 seconds, so assuming my eyeballing is somewhat correct, it spread with a speed of 42,857 m/s. This seem like a good estimate of the Delta-7's speed. If it takes less than a second to pass a distance greater than the asteroid, it should be more than 32 km/s. It also gives a rough idea of the much greater speed whith which the Delta-7 approaches the rings since all this took place inside them.
