The Rancor-keeper had a pretty shitty job IMO. I'd hate to wake up everyday and have to feed and care for that rancor. I'd have such high blood pressure, and it's probably pretty smelly too.

Anyways, I'd say a sucky job is TIE Fighter pilot. No Shields, everyone who isn't actively trying to kill you doesn't really give a shit whether they accidentally kill you, not to mention having to dodge multi-kilometer capital ships, engine exhausts, weapons fire, etc...
