Mentioned several times in Star Wars Time Tales, this nifty stuff can do shit from making suns go nova to allowing a decapitated Sith Lord to cheat death. It was mostly lost, what with the fall of the Sith Empire and then Palpy's destruction of the holocrons and other such stuff.
Now, my question is, how the hell did they come up with this stuff? There are various places in Time Tales where they're mentioned researching it, but how the heck do you do that? Go to a distant star with no planets that nobody cares about and use the Force on it in one way or another until KABOOM? Or was it possible to theorize ways to do these incredible things and then simulate it somehow?

Well, I'd imagine that the life-extension tricks would be researched by any interested sith magician using mostly unwilling subjects- when the primary method of advancement in a culture is "do huge amounts of bodily harm to your boss," there'd likely be a keen interest in figuring out how to survive some pretty nasty injuries, and the rather brutal sith empire probably wouldn't look down on human experimentation. The head-in-a-box sith seems to be a special case- likely kept alive through sheer strength in the force initially, the major advances involved would be artificial respiration and such- not too big of a stretch given what we've seen in Star Wars.
As for blowing up stars, that looked like one-time trick improvised by Naga Sadow as he was escaping. Likely the relevant powers were just extremely large scale telekenesis and a knowledge of stellar life cycles.

the sith have no moral qualms about using others for their experiments. i would imagine that they'd simply keep toying around with the force and doing experiments until they got the results they wanted. it may be dangerous, but sometimes it's the only way to get results.

As Sith use the Force through the intensity of their emotions, I think that they worked out the basics as they evolved (TK against a rancor or other predator that is about to eat you may have been the very beginning of it) and after that, I suppose that it was just exploring their limits, just as normal people tries to discover how long they can run and all that...
On the detonating Star bit. Remember that this is a galaxy where stars go nova and wipe out entire civilization and no one gives a damn. Also at the time the republic did not even no the Sith empire existed let alone what its territory entailed. I'd imagine that astronomer (the only ones eho would even care mind you), would see a star go nova and think it very odd. He would then publish and promptly be forgotten. It not like they had the ability to check out some bizzare phenomena on the other side of the galaxy, in unknown space no less.

Yeah, but remeber light takes a LONG time to travel in between such vast distances.
