Proton Torpedo Yield

This has been on my mind for some time now but can anyone provide a definite commentary on the characteristics and firepower of Proton Torpedos?

Stuff like: How do they work? Are there any good yield calculations? Are they meant to be used against capital ships? If so how many would it take to bring down, say ISD-level energy shielding? Any evidenced information would be much appreciated, thank you.
