You've all heard about Utapau was the original name for Tatooine, Han Solo was to be a lizard alien, things like that. I've also heard more interesting things, like the Sith were to be space pirates, and that Moffs were religious figures.

Is there a central site that lists all of these old ideas that were changed in the actual filming?

At one time, there was no Death Star and no Empire. The bad guys were supposed to be a planet full of wookiees. And then there was 'Princess Luke'...
