Gungan shields...

I have a question. Why is it that gungan shields can hold back water but not humans who are 80% water?

It has something to do with the speed at which the matter is hitting the shields. Too slow (water) or too fast(blasters), and it doesn't get through.

Kinda like Holtzman Shield Generators from Dune?

Im not to sure about that. There would be lots of underwater current and the pressure would be hefty also. I asked how Obi Wan and Qui Gon were able to get through a shield that can hold back water and not humans that are 80%. Also It is highly improbbable that it is based on speed, especially when the Bongo blasted its way through at full speed. Which leads to the question, Why couldn't the Trade Federation ATTs and MTTs go through them.

Perhaps they are programmed to allow certain types of materials through.

The shield could have been linked to a sensor that lets sentient lifeforms pass.

Repulsors don't work through shields.

Simple way: stick a scanner, match the readings to a list of sentient species. It matches, come on in! It doesn't, SPLAT!

On the topic of Gungan shields, they don't disrupt electrical equipment, as seen by the droids walking through the shield in TPM. Also, what would it take to overload a Gungan shield? The foot soldier shields operated similar to a lightsaber, by bouncing blaster shots off.

The Bongo was going a lot slower than a blaster bolt, and walking the droids through the shield is a better idea than driving the tanks and transports in because of: numbers, total combined firepower of the droids, disabled/destroyed tanks being used as cover for the gungans/obstacles for other tanks (easier for a droid to walk over a droid than an ATT to hover over another ATT), and if they lost 1 MTT that meant they lost 112(?) droids.

If the readings the shied gets matches that of a species in the
computer it gets through. Sounds plausable to me.

Human skin is denser than water, isn't it?

Or, the shields used to protect the domed cities, the shields used to allow people to "enter" the bongo shields, gungan theater shields, and the bongo "bay door" shields are all programmed for different uses/properties.

I think it's very simple: the same reason a shield might not let thru water but might let thru a water balloon.

How come no one wonders how the magnetic field on the Death Star could hold in air while letting in and out Millennium Falcon's?

Or why there were no TIE's attacking at air level at the Battle of Hoth?

Same thing.
