The Jedi risk their lives defending the Republic from childhood to until old age or a battle claims them. It is a difficult job so do they get paid any salary ? Or do they consider it an honor to be serving as a Jedi and refuse any salary ?

Well, I think they're kind of like monks. They think its their duty, selflessness, hoohah, Jesus, and all that. Didn't Anakin say something to this effect in AOTC? Jedi aren't allowed to do this, or that, or whatnot?

Jedi have a small allowance for expenses, but no budget for luxuries, so they always travel as humbly as possible.
So, yes to the above post.

They live off the Republic for the most part; likely they get free food, housing, and shit. No actual payments, just support by/from the state. As .303 said, they get an expense account as well.

I doubt they get a salary, that seems like it would be very out of character, but they must get some form of allowance for expenses. I'd suspect they also have the ability to access much larger amounts of money then whatever the allowance is for emergency use. That's just all logical.

I'd see them as a bit of both. In the service of the Republic, they can commandeer anything, or have a large expense account for such purposes. They also get a paycheck, so they can go into bars and other locations, and buy stuff there. The stuff they buy is often in the performance of their duty (a new hyperdrive, for example), or is relatively small (a drink in a bar).
So, if they stick to Republic owned operations, they get the easy life. Free food, room & board, etc. So a Jedi could buy a small dinner at a nearby fast food joint, or get a free gourmet meal at the Republic State Dinner. Of course, if they go to the Dinner, they are expected to be on a mission, and would likely be a damper on any festivities while present.
I.e. A Jedi attempting peace between two systems would invite himself to the dinner, and would be the main guest. After the negotiations were done, the Jedi would retire, and the festivities would begin. The Jedi would either have a small room to sleep, or if image is important, the Republic would put him up in a nearby hotel.

I would assume the Jedi live by a creedo similar to Franciscans:
"Ask for nothing, refuse nothing."

Is it ever stated where the Jedi live?
Do they have quarters at the Temple? Some dormitory somewhere?

they have personal quarters inside the temple (the place were Mace Windu (in AOTC) meets Yoda is suppose to be inside Yoda quarters)

Why would they want free shit?
I'm sorry, but I just could not resist.

I think Dark Rendezvous mentioned that they get a lot of the money they use from donations by those friendly to the Jedi order.

in one of the Prequel books, i think its Cestus Deception, Obi-Wan says that he will have to get some money and that he will have to go over the budget, He refered to the Jedi Council as giving him the money

I'm willing to bet the Jedi have alot of accounts hidden away from investiments and all that (I mean come on, precog and the stock market), the Order lives off of. A Giant, Tax-Free Corporation of sorts.
That would also explain where Vader got all his money. When the Jedi order was killed off, the Emperor gave him there assessts.

Wouldn't it be considered the Dark Side by those overly self-righteous people to use the Force for your own ends?

There are most likely restrictions in place to prevent any exploitation by those in the Order. IIRC the Jedi had plenty of ligitiment funding, both from the government and private donors.

True, but that could also mean that they have the kind of tax status of a church in the USA; i.e., they are non-profit, living off of govt. funding and donations, so they are not taxed.

That was all well and good until Palpatine introduced the "Midichlorian tax"...
The real reason Anakin joined the Sith was so that he could get the "Dark Side exemption."
