Blaster noise

Why do blasters make that 'zot!' noise? Wouldn't it be more of a 'crack' or a crackle?

Well... they do make more of a bang/crack sound specially in these later versions were they enhanced the blaster sounds.
I think a more in universe explanation is blasters don't heat the air they travel through as all energy is released on impact. So all noise generated is from the weapon that generates the bolt and from the bolt interacting with air.

Indeed, and those interactions maybe something we're unfamiliar with, since the bolts themselves seem pretty exotic in nature.

The sounds could be coming from some mechanism within the weapons themselves, too.

Or possibly that the sound designers wanted to use a noise generally accepted for a 'ray gun'?

Because one of the sounds they used for blasters included hitting the grounding cable from a telephone pole with a big wrench (I shit thee not. Thats what they used.)?
