how was the order wiped out? did the clone wars decimate them, or did anakin slaughter hundreds, or did palpatine make a grand edict? some combination of that, or something else entirely?

Some more likely got killed off by the Trade Federation. The rest either fell to Vader and the Imperial military.

The Order suffered losses during the Clone Wars and Palpatine's New Order purged the remainders except for Luke Skywalker and worthless EU force sensitives.

many of the jedi were killed during the clone wars and the rest were hunted down by vader and palpatine after palpatine had secured power

Indeed. There were massive losses at Geonosis and it seems that if that battle and Obi-Wan's rank as general is something to go by, the Jedi served as commanders/commandos in the Clone War- and got whittled down in 3-5 years of hard fighting. Any remainders will be killed by Vader.

yep imagine you have, say, 1000 fully trained jedi knights operating throughout the galaxy, each with one padawan.
Seeing that they participate actively in combat, one can safely assume that by the end of the war there will probably be no more than a few dozen.

I thought there was 10,000 jedis... I could be wrong cause I dodn't recall the source of that information.

10,000 Jedi in the entire galaxy. The Separatist forces massively outnumbered the Jedi, as Mace Windu says at the beginning.
Palpatine: My negotiations will not fail.
Windu: If they do, there aren't enough Jedi to protect the Republic. We're keepers of the peace, not soldiers.
Something to that effect. Considering how rapidly the droid armies can be built, you're going to lose a lot of Jedi.
