I've read a number of SW novels, but I'm curious as to which ones are generally considered to be the best from a 'technical perspective' (something like good portrayals of combat, and the like). What are some recommends?

The Black Fleet Crisis trilogy had the best battles, I thought.

Those battles pale in comparisson to the later NJO Fleet actions. Star by Star, Destinys Way, Rebel Stand and Rebel Dream stand out in perticular. In BFC 200 ships make a fleet, which is cool, but in the NJO they had 1000's of ships in each fleet.

The difference is the BFC fleet actions make it look like the NR runs an actual Navy that understands concepts like concetrated firepower, missile defense, passive sensing, and proper combat operations centers. Basically while NJO had some big fleet actions the ones in BFC were more technically satisfying.

While I agree that the ANH novelisation is a great read in both story and technical regard, I'd also say that the universe it presents has an overall different "feel" compared to that within the films and EU.
