COWBOY BEBOP
It's a goddamned brilliant series from start to finish. The characters are great and the stories are run the full range of emotion from humor to heart break and they do it well. Equally importantly, you can watch it again and again.
This anime actually inspired me to get off my lazy ass and play basketball seriously. About a red-headed guy, Hanamichi Sakuragi, who hates basketball at first but eventually turns out to be Michael Jordan No. 2. At once funny and inspiring, and quite possibly the longest anime in existence.
Ahh, I remember that! It was fairly good. He and another guy are fighting over a girl too. I watched it in Taiwan when it was on TV

That and the Honor Harrington movie/miniseries/series both seem to be caught in some sort of limbo. They aren't cancelled but they don't go any where either. It's kind of weird really.

It's a little known fact that there's a lot of cultural exchange within many of the best(and some of the worst) anime. The original Bubblegum Crisis was a first dreamed up as an animated Blade Runner, and still maintains a rediculous amount of BR references in both plot and overall character/world design(case in point, one of the main characters is named Priss, has a would-be boyfriend named Leon, and is the leader of a band known as The Replicants).

SaiKano (aka Seishu Heiki Kanojo): Don't let the first episode fool u, this is a very dark anime on very real characters(in terms of personality, the ultimate weapon bit is a little edgy..but it serves a very serious plot purpose) thrown into a incresingly desperate war. Episode 9 in particular...even the fansubbers warn after ep 10 u won't get any happy ending. but still, a quality anime.
Vandread and Vandread 2nd Stage: good action, good characters, funny and serious. won't find a better combination elsewhere..look out for the last space battle.
Hoshi no Koe: Like Patlabor, this short OVA has mecha as auxilleries to the plot, not *the* plot. touching love story.
Kanon: Bit like love hina, but less slapstick. touching and tragic
Kenshin OVA Death&Betrayal: An absolute must for Kenshin fans.
Inuyasha: Fantasy comedy light-hearted anime. rest assured no fav character will die...
.Hack Sign: noirish anime set in an MMORPG. if u liked Noir, u might enjoy this. same music composer especially evident.

I've been watching "Serial Experiments Lain", which is stranger by far than Evangelion, and has a bunch of "WTF" moments one after another. I hardly can grasp what everything happening is leading to, and yet... I keep watching. I would reccomend it.

Those Who Hunt Elves- Pure comedy involving a movie star, a kung fu master, and a high school kid with guns and a tank. They're transported to a world of elves and must strip every female elf in the land in order to find the 5 pieces of a spell that have been planted on their body. Oh, and they are helped the grand elf priestess who is trapped in the body of a dog. Do the math.
Iria - I liked it, most probably don't, its long. Basically, girl becomes bounty hunter like brother, fights being monster thingy. Any more would be spoilers
Tenchi - Tenchi Muyo is the best series, then Tenchi Universe. Tenchi in Tokyo is utter crap. The "Tenchi in Love" movies (1 and 2) are pretty good, "Tenchi, Daughter of Darkness" suffers continuity issues and is poorly done anyway
El Hazard - Never saw the OVA but here it is as good as the Mangas (which are good)
